This winter’s residency at the concept restaurant features Conca del Sogno, the Positano, Italy, eatery renowned for exquisite sea-to-table fare for more than 60 years. Of course, Aspen’s not on the Amalfi Coast, but expect dishes like salt-baked branzino, sea bass carpaccio with pomegranate and chives, and seared scallops accompanied by saffron, grilled pumpkin, and cream, along with the all-important tiramisu.
