A new vegetarian restaurant opens in Aspen, the Spring Cafe.

Considering how crazed Aspenites are for wellness, it’s hard to believe it could have taken so long for a vegetarian restaurant and juice bar of this caliber to arrive. But if you know what spelt flour is and your mouth waters at the prospect of tempeh bacon or vegan cashew cheddar cheese, then Spring Café (spring cafeaspen.com) should serve you well. The only meat on the menu comes from a coconut (and fortifies the restaurant’s gorgeous smoothies), and the only burger is made with beets and other organic veggies—turning it a rather intense shade of purple. Located on the corner of East Hopkins and Spring Street in an airy, modern space with views of Aspen Mountain, the café and its raw juices, smoothies, salads, and selection of vegan, vegetarian, and gluten-free options for breakfast and lunch have been drawing the Lululemon-clad in droves. (People flood in just before close to grab takeout for dinner, too.) Can you say Ommmm-elet?
