Tuesday Foods: Planting the Seeds of Health

A catering company working to help you kick the meat habit, one delicious meal at a time.

Is it our imagination, or does everyone in the Roaring Fork Valley have glowing, youthful skin and a toned bod? Which has us wondering, is everyone a Tuesday Foods client? Could be, because the Carbondale-based startup delivers health (at least in the form of superfood-rich, plant-based meals) to your doorstep.

The company, which was co-founded by Lisa Cohen and Kelly Hollins in 2019, removes the barriers of time and planning to healthy eating. When Cohen first dreamt up Tuesday Foods in 2019, she was working as a nutritionist in private practice in Basalt. Her clients had goals and good intentions, but not always follow-through. “They knew what to do, it was the execution. Yes, I know you can make a salad, but are you going to make a salad with 10 different superfoods, a perfect combo of protein, fat, and carbs, with toppings for texture and homemade dressing?” she says. “I focused my attention on filling that gap.” And she enlisted the help of Hollins, who was a health coach, a vegan chef, and a gluten-free baking whiz.

Unlike boxed meals from established delivery services with national distribution that arrive via mail, meals from Tuesday Foods are minimally packaged, locally sourced from within 200 miles, and sustainably minded (hence the online menu and reusable glass jars that are swooped up when you’re finished with them).

“We joke that it’s like the old-school version of the milkman,” says Cohen.
How it works: Folks sign up, receive the weekly menu in either entree- or lunch-size portions, and have the option of add-ons like smoothies or once-a-month juice cleanses. And, voila, healthy choices abound. “When your delivery comes, your fridge is packed with beautiful food for the week,” says Cohen. “You don’t have to chop, go to the grocery store, or figure out what to make.”

The company delivers (always on Tuesdays!) to 40 to 60 clients a week in the Roaring Fork and Vail Valleys, as well as the Front Range. Cohen and Hollins purchased a commercial kitchen in Carbondale in 2022, which has allowed the company to grow both in scope and scale. Tuesday Foods now employs 15. It also added a juice program when it purchased Carbondale’s Tonic Juicery in 2022. But even as it expands across the state, the Roaring Fork Valley will always be Tuesday Foods’ hometown and inspiration. “Aspen is so unique and so wonderful,” Cohen says. “Everywhere you look our ideal client is right before our eyes.” 

The lunch option (five 16-ounce servings) starts at $215 per week; the signature program (five 32-ounce servings, plus treats and crudites with dips) starts at $425.
