First it spawned Heather’s Mayberry Café, which eventually graduated to new digs in Basalt. Now, an unassuming corner of the Phillips 66 gas station on Basalt’s Midland Avenue (basalt66.com) has seen another tenant graduate to stand-alone ownership. Dam Good Tacos—which became arguably the Roaring Fork Valley’s speediest eatery opening, in one month, June of last year—recently expanded to a forty-seat restaurant in Fort Collins. The college-campus space is about sixteen times larger, but owners Chris Camp and Michael Falco, who sharpened their knives at the Little Nell and Ajax Tavern, respectively, aren’t abandoning the Roaring Fork Valley just yet. Instead, the duo has dreamed up sassy new creations to woo taste buds downvalley: the Pacific Rim (seared tilapia, coconut vinaigrette, and slaw of carrot, red cabbage, and grapefruit), the Italian Stallion (cumin-spiked beef and pork meatballs, sautéed peppers and onions, marinara), and traditional Pastor (slow-roasted carnitas pork shoulder, pineapple-citrus salsa, avocado puree). “This place is the experiment spot,” says Camp, manning an applewood smoker outside the gas station. If not in Basalt, look for the tacos at festivals this summer.
